Carmine’s Q’d Chicken ‘za

Ingredients
- 1 (one) 12″ Fresh or Frozen Pizza Crust (or homemade, see dough recipe below)
- 250 ml (1 cup) Carmine’s ‘Q Sauce (your favourite flavour)
- 454 g (1 lb) boneless chicken breast, cubed and cooked
- 125 ml (½ cup) hot peppers; banana or pepperoncini
- 125 ml (½ cup) finely chopped red onion
- 62.5 ml (¼ cup) finely chopped fresh cilantro
- 500 ml (2 cups) shredded cheddar or jack mix cheese
- 30 ml (2 tbsp) olive oil
- Salt and pepper to taste
Directions
- Prepare chicken;
- Cut chicken into small cubes
- Season with salt and pepper
- Panfry in olive oil over medium heat until internal temperature of 71°C (160°F)
- Prepare pre-made dough as directed (or as per recipe for homemade dough below)
- Preheat oven to 175°C (350°F)
- Assemble remaining ingredients
- Spread Carmine’s ‘Q Sauce over pizza dough
- Add chicken, peppers and onions over sauce, evenly covering pizza
- Cover with shredded cheese, drizzle with Carmine’s ‘Q Sauce
- Bake on centre rack of preheated oven for 15 minutes
- Enjoy!
Homemade Pizza Dough
Ingredients
- 250 ml (1 cup) warm water (45°C / 110°F)
- 1 package active dry yeast (11.25 ml / ¼ oz)
- 5 ml (1 tsp) white sugar
- 625 ml (2½ cups) bread flour
- 30 ml (2 tbsp) olive oil
- 5 ml (1 tsp) salt
Directions
- Place warm water in mixing bowl, add yeast and sugar, quickly stir. Let stand 10 minutes, until creamy looking
- Add flour, oil and salt to yeast mixture, beat until smooth. Recommend using stand mixer, but by hand is possible
- Cover and let stand for 5 minutes
- On a floured surface, turn out dough and roll into a 12″ circle
- Transfer to pizza pan
- Add ingredients as desired
- Bake in preheated 175°C (350°F) oven
