Smoked ‘Q’d Brisket Dip

Ingredients

  • 454 g (1lb) bacon, chopped
  • 4 large jalapenos deseeded and finely chopped
  • 454 g (1lb) or 500 ml (2 cups) ‘Q’d Brisket (diced or pulled)
  • 500 g (2-3 blocks) cream cheese
  • 8oz shredded jack cheese
  • 8oz shredded cheddar cheese
  • 4 tbsp bbq rub spices – to be determined
  • 187 ml (3/4 cup) Carmine’s ‘Q Sauce (your favourite)
  • 62.5 ml (1/4 cup) green onion – chopped

Directions

Preheat oven / grill to 170°C (350°F)

Skillet One

  1. In a skillet, bake / panfry bacon until crisp, stirring regularly. Remove from grease and let cool
  2. Remove (and save for another recipe) most of the bacon grease, leave a little to cook jalapenos
  3. Add jalapenos to bacon grease pan, bake / panfry for 5 mins until soft, stirring regularly
  4. Add chopped or pulled ‘Q’d Brisket into jalapenos, add 2 tbsp bbq rub, mix very well, bake 15 mins, stirring occasional

Skillet Two

  1. In a separate skillet, sprinkle whole blocks of cream cheese with bbq rub bake 15 mins
  2. Mix 3/4 of cooked bacon into softened cream cheese
  3. Add and mix together jalapenos & ‘Q’d Brisket, Carmine’s ‘Q Sauce and cream cheese & bacon
  4. Fold in 3/4 of shredded jack cheese, 3/4 of shredded cheddar cheese, mix very well

Bake for 30 minutes 170°C (350°F)

 

  1. Top with the remainder of shredded cheese and bacon
  2. Bake / broil on high heat until golden brown. Approximately 5 minutes
  3. Drizzle top with Carmine’s ‘Q Sauce and chopped green onions
